If you haven't purchased a big bag of bright red, fresh summer cherries yet… well what are you waiting for? Splurge so you can make this luscious, raw, vegan dessert.

Facts About Cherries:
high in anti-oxidants
contains anti-cancer agents
provides anti-inflammatory benefits
contains beneficial phytonutrients
contains 19 x more beta carotene than strawberries

Dark Chocolate Covered Cherries
 Cherries
shredded coconut

·      Slowly and gently melt chocolate at lowest heat.
·      Add coconut oil (melted/liquid) and sugar, if desired and stir until well combined.
·      Dip the cherries into the chocolate and place on a piece of wax paper. Before the chocolate has hardened, gently roll them in shredded coconut, crushed almonds, cacao nibs or powder or whatever you fancy.
·      Leave them in the refrigerator just long enough for the chocolate/coconut oil to harden.
·      Store in the refrigerator until ready to eat.
