Sweet Cornbread with Orange Chia Jam & Toasted Coconut


Sweet Cornbread:
Ingredients
2 cups of soy milk (your choice)
1 cup cornmeal 
1/4 teaspoon xanthan gum
2 tsp of baking powder
1/3 cup of maple syrup
2 tsp vanilla
1 Tbsp coconut oil

Directions
Preheat oven to 180 degrees. 
Grease a baking tin with coconut oil.
Combine dry ingredients. 
In a separate bowl, combine wet ingredients, whisk well. 
Pour the dry ingredients into the wet and mix. 
Pour batter into prepared pan and place in oven.
Bake 20-25 minutes or until a knife or toothpick comes out clean when inserted into center of the bread. Allow to cool before cutting.

Orange Chia Seed Jam:
Ingredients
Juice of 3 oranges
¼ cup maple syrup 
2 Tbs chia seed, whole seeds
2 Tbs orange zest
½ tsp vanilla extract
Dash of cinnamon

Directions
Bring orange juice/zest and maple syrup to a boil.
Add chia seeds.
After a boil, turn down the heat to low and simmer for 10 minutes or until thickened.
Lastly, turn off the heat, add vanilla and cinnamon.
Keep cool in the refrigerator.
