Indian sweet potato lentil patties
Ingredients
1.5 cups of mixed buckwheat/channa,soaked
half a large sweet potato, mashed
1 Tbs of coconut milk
1 small onion, finely chopped
1 garlic clove, minced
1 tsp cumin
1/2 tsp of chilli powder
1 tsp curry powder
1/2 tsp baking soda
handful of raisins
bunch of coriander,finely chopped
salt + pepper
1 Tbs extra virgin olive oil (for the oven tray)
Directions
Soak buckwheat groats and channa dahl for at least 2 hours. (I left mine to soak overnight).
Cook grains for 10 minutes or until softened.
Peel, chop and steam sweet potato.
Meanwhile chop onions, garlic and coriander.
Get out a large bowl. Put the grains in a food processor and process until fully processed. Add grains to the bowl.
Add in the rest of the ingredients (except for 1 tbs of olive oil) and mix well.
Bake in the oven on 200 degrees, 10 mins or so on each side until golden brown.
Serve with your favourite dipping sauce, or as a burger patty. Whatever you like :)
