Buckwheat Cinnamon Bun |
Ingredients
2 cups of soaked or sprouted buckwheat, rinsed
1 tsp baking powder
1 tsp of flax seeds
2 Tbs of maple syrup
splash of almond milk
1 Tbs of cinnamon
1/4 cup of cranberries
1/4 of chopped walnuts
2 Tbs of sesame seeds
coconut oil for greasing
Directions
Preheat your oven to 180C.
Place 2 cups of soaked buckwheat in a blender and mix.
Add the baking powder, cinnamon, maple syrup and the flax egg until well combined. Add a SMALL amount of milk of your choice (I used alond milk). It should make a sticky sort of dough. Fold in walnuts, cranberries and sesame seeds. Break up mixture and roll in to small bread buns. Transfer onto a greased pan and sprinkle with your desired topping, I used more sesame seeds. Put into the oven and bake for approximately 25 minutes, or until the bread is lightly browned on top, and a skewer is removed cleanly. Allow to cool, then remove from the pan and serve either on its own, or smothered with your favourite condiment.
