A super low calorie meal that is satisfying and packed with flavour and is grain free. One serving of cauliflower rice contains about 35 calories and 7.5 grams of carbohydrate, and provides 2 vegetable servings!
Here's my version of cauliflower rice, suits vegan, gluten-free and Paleo diets - so a rather universal dish. Cheap as well!
Quick and Easy Cauliflower Rice with Tomatoes & Basil |
Ingredients
1 head cauliflower, trimmed and cut into florets
1 tablespoons of olive oil
half an onion, diced
1 garlic clove, finely chopped
3 roma tomatoes, diced
big bunch of basil, roughly chopped
salt + pepper

Directions
Place cauliflower pieces into the work bowl of a food processor (you may have to do this in batches). Pulse until cauliflower pieces are about the size of grains of rice.
In a large frying pan, heat oil over medium-high heat. Add the onions and garlic sauté until translucent. Stir in the cauliflower, reduce the heat and cover. Let it steam/cook for 5-8 minutes or until the cauliflower is tender.
Stir the roma tomatoes and basil into the cauliflower. Cook until heated through. Taste, adding salt and pepper.
